The angled sides keep in steam and discourage dry frying. These pans are very shallow and not too heavy so batter is easily swirled over the bottom making the perfect crêpe. When properly cleaned and seasoned, the pan will darken with use and develop a natural non-stick surface patina - thus the name blue steel. Excellent on all heat sources and is INDUCTION SAFE.
