It is also a totally sustainable natural resource. After harvesting bamboo it grows back quickly since the root system is so dense. Unlike most other hardwoods, bamboo absorbs very little moisture and consequently does not shrink or swell as much, making it a superior choice of material for cutting boards. These cutting boards simply wash off with soap and water. Oiling it with mineral oil will keep it looking new. Bamboo cutting boards make an attractive serving and chopping surface.
